This batch, harvested in early January is now set to its natural crystal
This batch is our first harvested from the point of Mahurangi West and around the Regional Park.
Bottled in its liquid form, then left to set to its own sparkling sweet crystal.
Pohutukawa throws a large crystal, which explodes with brilliance in your mouth.. children love it!
Salty sweet and delightful.. with the warmer weather, it is now softening and easy to scoop. 
It will melt down in hot water, to liquid, or left for a few hours in a hot car !
